Method
 

  1. Gather all your ingredients and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond butter and warm honey. Stir until the mixture becomes smooth, fragrant, and slightly glossy.
  3. Add the rolled oats to the wet mixture and fold gently, ensuring the oats are evenly coated and begin to absorb the creamy mixture.
  4. Stir in the chocolate chips, a pinch of salt, and a splash of vanilla extract. Mix until everything is well combined and the chocolate is evenly dispersed.
  5. Using a small scoop or tablespoon, portion out the mixture and gently roll into balls about 2 inches in diameter. Place each on your prepared parchment-lined tray, spacing them evenly.
  6. Once all the bites are formed, place the tray in the fridge and chill for at least 30 minutes until they firm up and develop a slightly matte surface.
  7. After chilling, remove the bites from the fridge. They should be soft yet firm, with a chewy texture and a rich, nutty aroma. Serve immediately or store in an airtight container in the fridge for up to a week.
