Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Unroll the puff pastry sheet on a lightly floured surface and cut into 24 small squares, about 2 inches each.
Place the pastry squares evenly spaced on the prepared baking sheet. Gently spread slices of brie onto the center of each square using the back of a small spoon, leaving a small border around the edges.
Top each brie dollop with a small spoonful of chopped cranberries. Drizzle a tiny bit of honey over each for a touch of sweetness, and sprinkle with chopped thyme if using.
Fold the edges of each pastry over the filling to create a rustic pocket, pinching gently to seal. Some filling may peek out—this adds charm and flavor.
Brush the tops lightly with the beaten egg using a pastry brush. This will give the bites a shiny, golden finish when baked.
Bake in the preheated oven for 15–18 minutes, or until the pastry is puffed, golden, and crispy, and the cheese is bubbling and melting.
Remove from the oven and let the bites rest on the baking sheet for 5 minutes. The filling will settle slightly, making them easier to handle.
