Ingredients

  • 200 g dark chocolate preferably high-quality, chopped into small pieces
  • 1 cup rolled oats old-fashioned oats for chewy texture
  • 1/4 cup unsalted butter melted, or coconut oil for dairy-free option
  • 1/4 cup honey or maple syrup natural sweetness that adds depth
  • 1/4 teaspoon sea salt enhances chocolate flavor
  • 1 teaspoon vanilla extract vanilla extract deepens flavor and rounds out the chocolate
  • Optional nuts, dried fruit, or seeds add-ins for extra texture and flavor

Equipment

  • 20x20cm (8x8 inch) pan
  • parchment paper
  • Heatproof bowl
  • Spatula
  • Baking sheet or plate

Method

  1. Line your 20x20cm pan with parchment paper, leaving a little overhang on the sides for easy removal later.
  2. Place the chopped dark chocolate into a heatproof bowl. Set it over a pot of simmering water, making sure the bowl doesn’t touch the water, and gently melt the chocolate. Stir frequently until smooth and glossy, about 3-5 minutes.
  3. In a large mixing bowl, combine the rolled oats, sea salt, and any optional add-ins like nuts or dried fruit. Mix well to distribute evenly.
  4. Pour the melted chocolate into the oats mixture. Use a spatula to fold everything together, coating the oats thoroughly until the mixture is glossy and thick.
  5. Add the melted butter, honey or maple syrup, and vanilla extract to the mixture. Stir well until all ingredients are evenly combined and the mixture becomes sticky and cohesive.
  6. Transfer the mixture into your prepared pan. Use the back of a spatula or your fingers to press firmly and evenly into the pan, creating a compact, smooth layer.
  7. Place the pan in the fridge and chill for at least 2 hours, or until the slice is firm and set. For quicker results, you can freeze it for 30-40 minutes, checking occasionally.
  8. Once set, lift the slice out of the pan using the parchment overhang. Use a sharp knife warmed slightly under hot water to cut into squares or rectangles.
  9. Serve immediately, or store the slices in an airtight container in the fridge for up to a week. For longer storage, freeze the slices and thaw before enjoying.

Notes

For extra flavor, toast the nuts before adding them in. Use high-quality chocolate for a glossy finish and rich flavor. Press the mixture firmly into the pan to ensure clean slices and a compact texture.
