  • 1 1/2 cups pitted Medjool dates soft and sticky
  • 1 cup shredded coconut preferably toasted
  • 1/4 cup nut butter almond, peanut, or tahini
  • 2 tbsp honey or maple syrup for binding and sweetness
  • 1 tsp vanilla extract optional but recommended
  • a pinch sea salt enhances flavors

Method
 

  1. Chop the dates into smaller pieces to help them mash easily, then place them in a mixing bowl.
  2. Use a fork or your hands to mash the dates until they form a sticky, smooth paste. This releases their natural sweetness and makes them easier to work with.
  3. Add the shredded coconut, nut butter, honey or maple syrup, vanilla extract, and a pinch of sea salt to the mashed dates. Mix everything thoroughly with a spatula until you get a thick, uniform dough that feels sticky and cohesive.
  4. Scoop about a tablespoon of the mixture and roll it between your palms to form a compact ball. Repeat until the mixture is used up, placing each ball on a parchment-lined tray.
  5. Gently press down on each ball to slightly flatten them, if desired, then transfer the tray to the fridge.
  6. Chill the bites in the refrigerator for at least 30 minutes until they firm up and develop a chewy, slightly sticky texture.
  7. Once chilled, enjoy these bites straight from the fridge or at room temperature for a softer, more tender bite. Store leftovers in an airtight container in the fridge for up to a week or freeze for longer storage.
