Pineapple Mint Popsicles

These refreshing popsicles combine the tropical sweetness of pineapple with the bright, herbal notes of fresh mint. Ingredients
  

  • 1/4 cup honey or maple syrup
  • 1/4 cup water for syrup
  • 2 cups pineapple chunks ripe and juicy
  • 10 leaves fresh mint roughly torn
  • 1 tablespoon lime juice freshly squeezed

Method
 

  1. Combine honey and water in a small saucepan and heat over medium-low until just simmering, stirring to dissolve the honey. Let cool slightly.
  2. Place pineapple chunks into the blender, then pour in the cooled syrup and add torn mint leaves. Squeeze in the lime juice.
  3. Blend on high until smooth and vibrant yellow with specks of green from the mint, about 1 minute. Taste and adjust sweetness if needed.
  4. Pour the mixture into popsicle molds, leaving about 0.5cm space at the top. Insert sticks and gently tap the molds to remove air bubbles.
  5. Place the molds in the freezer and freeze for at least 4 hours or overnight until completely solid and firm.
  6. To unmold, run warm water over the outside of each mold for 10-15 seconds, then gently wiggle the popsicles free.
  7. Enjoy immediately for a refreshing, herbal-tropical treat that’s perfect for hot days or whenever you need a cooling boost.
