Ingredients

  • 8 oz cream cheese softened at room temperature
  • 1/2 cup mayonnaise or sour cream
  • 1/2 cup grated mozzarella or your preferred melting cheese
  • 2 cups fresh spinach finely chopped, stems removed
  • 1 cup artichoke hearts drained and chopped
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • additional cheese for topping optional, extra cheese on top before baking

Equipment

  • Mixing bowl
  • oven-safe dish or skillet
  • Knife
  • Chopping board
  • baking spatula

Method

  1. Start by preheating your oven to 180°C (350°F) and gathering all your ingredients and equipment.
  2. In a mixing bowl, combine the softened cream cheese, mayonnaise, and grated mozzarella. Stir until the mixture is smooth and creamy, with no lumps.
  3. Finely chop the fresh spinach, removing any tough stems, and fold it into the cheese mixture. If using frozen spinach, make sure it's thawed and well-drained before adding.
  4. Drain and chop the artichoke hearts, then add them to the bowl, mixing evenly to distribute the tender, smoky pieces throughout the dip.
  5. Mince the garlic and add it to the mixture, along with a tablespoon of lemon juice, and season with salt and pepper. Stir well to combine all flavors.
  6. Transfer the mixture into an oven-safe dish or skillet, spreading it out evenly with a spatula. If desired, sprinkle extra cheese on top for a golden crust.
  7. Bake in the preheated oven for 20-25 minutes, until the dip is bubbly around the edges and slightly golden on top. You'll hear gentle bubbling and see a lovely crust forming.
  8. Remove the dip from the oven and let it rest for 5 minutes. This helps the cheese set just enough to make scooping easier and keeps it gooey and warm.
  9. Serve the warm dip with crusty bread, pita chips, or vegetable sticks. Use a spoon to scoop out the cheesy, tender bites and enjoy the rich flavors and textures.

Notes

Feel free to customize this dip by swapping in different cheeses or adding a dash of hot sauce for extra heat. For a dairy-free version, substitute with plant-based ingredients, and for a vegan option, use vegan cheese and mayonnaise.
